Christmas cookie receipt

For this recipe, you’ll need:

flour of your choice

250g butter (replace with vegetable
butter or 30cl sunflower oil
for a vegan alternative)  

oeuf-dur.png  

4 egg yolks + 1 whole egg
(replace with 2 bananas or
1 purée for a vegan alternative)

225g
of either caster sugar,
coconut sugar or brown sugar

2 tbsp
cinnamon

1 tsp
ground ginger
(optional)and a
pinch of salt  

For the icing:

4 egg
whites (replace with 4 tbsp
warmwater for a vegan alternative)

100g icing sugar and a dash
of lemon juice

 

Making the biscuits

  • Cut the butter into cubes and leave it to soften.
  • Crack 4 eggs and separate the whites from the yolks.
  • Whisk the egg yolks and whole egg (or alternative) together with the sugar in a bowl until the mixture turns pale.
  • Add the butter / butter alternative and mix well.
  • Add the flour, cinnamon, ground ginger (if desired), a pinch of salt and knead the dough by hand to form a ball.
  • Wrap the ball in cling film and leave it in the fridge for 1 hour.
  • Preheat the oven to gas mark 7 (210°C).
  • Dust your work surface with flour, then roll out the pastry to 1 cm thick.
  • Use a biscuit cutter to shape the biscuits, then place them on a baking tray lined with greaseproof paper.
  • Bake for 12 minutes, then leave on a rack to cool.
Making the icing
  • Mix the egg whites (or alternative), icing sugar and lemon juice.
  • Once the mixture is smooth, coat the biscuits with the icing and leave them to harden.

All that’s left is to enjoy the biscuits with your family and friends!
